With green beans fresh and in season right now, often people have their go-to way to prepare them.  Growing up that meant we boiled them and put butter and salt on them, and although I have to admit they are tasty like this – it isn’t the healthiest way to enjoy your fresh green beans.
Over the years I’ve been using my own go-to recipe.  I never measure, I just pour, mix and serve. It is my go-to for home and for pot-lucks or BBQs because it is so easy and delicious.  Friends will text me often and ask “Hey, how did you do those beans again? What did you put on them?”
Now –to be honest, this recipe isn’t mine.  This is something I’ve learnt from my mother-in-law.  My in-laws are from Switzerland and just one of the beautiful things about that is how I get to learn new ways to prepare foods.  This recipe (which I finally measured for the purposes of this post) is adapted from my mother-in-laws and can be served warm or cold.
2.5 cups cooked green beans
5 tbps white vinegar
2.5 tbsp mustard*
½ tbsp olive oil
1 – mix the oil, vinegar and mustard together in a large bowl,
2 – add the green beans and toss to coat
It is that simple.
One note about the mustard: you can use different kinds of mustard to give a different flavour to the beans.
