This is a great time of year for fresh, local tomatoes, onions, cucumber and herbs – and salsa is one great, highly versatile way of enjoying these veggies.
Although I called it “summer
salsa”, it is definitely a year-round favourite and my go-to for potlucks as it is always a crowd pleaser!
3 tomatoes, chopped
¼ white onion, chopped
½ cucumber, diced

2 avocado, chopped
½ cup parsley or cilantro, chopped
2 tbsp honey
1 lime
1) Combine the tomato, onion, cucumber and parsley/cilantro in a bowl
2) In a small bowl juice the lime and add the honey to the lime juice, mix well
3) Mix honey-lime dressing into the tomato mixture
4) Top with avocado and mix one more time right before serving
To make this into a bit more of a Mexican inspired salsa you can add things like black beans and corn niblets – this also makes it into a heartier salsa with a higher protein and fiber content.
Serving suggestions:
Try baking your own taco chips for a healthy alternative! All you need is a package of whole wheat soft tortillas and some seasoning. Heat the oven to 325F and cut the tortillas into ‘chip’ size pieces. Arrange in a single later on an ungreased baking sheet and season with chilli powder and your favourite no-salt garlic seasoning blend. Bake for 15-20 minutes, checking often to ensure they don’t burn!

Serve on top of chicken or turkey breastIn a pita with chopped chicken, turkey or beansUse to make a quick, flavourful salad – lay out a bed of lettuce, top with a generous serving of salsa, chicken/turkey/beans, and shredded low-fat cheese
